Peanut Sauce

Source: The New Moosewood Cookbook adapted by Michael Pistrang

1 cup peanut butter (creamy or chunky)

1 T grated ginger

1 T minced garlic

3 T brown sugar

2 cups hot water

4 T cider vinegar

2 T soy sauce

1 tsp salt

Red pepper flakes to taste

Olive oil

Heat some olive oil in a saucepan, add the garlic and cook for 1-2 minutes.  Add peanut butter and heat for 30 seconds or so, then add the remaining ingredients.  The sugar and vinegar amounts can be modified to taste, and water adjusted for desired consistency.

Continue to heat until just simmering, and can be blended until smooth if preferred.

This makes a little less than two cups of sauce; we often halve the recipe when serving for two people.

Great on rice or steamed veggies.
