Enchilada Sauce

1 onion, chopped
1 clove garlic, minced
1 can (3 cups) tomato puree
3 T chili powder
1-1/2 cups beef stock (make with 1-1/2 cup water and 2 beef bouillon cubes)
1 tsp. cumin
salt and pepper

Combine ingredients in a saucepan and simmer for 1 hour.

Pour over tortillas which have been filled with the filling of your choice. Bake 30 minutes.
