Uncle George's Italian Zucchini Pie

4 cups thinly sliced unpeeled zucchini
1 cup coarsely chopped onion
1/2 cup margarine
2 T parsley flakes
1/2 tsp salt
1/2 tsp pepper
1/4 tsp garlic powder
1/4 tsp basil
1/4 tsp oregano
2 eggs, well beaten
2 cups shredded muenster cheese (or mozzarella)
2 tsp mustard (I prefer dijon)
1 9-inch pie crust

Heat oven to 375. In skillet, cook zucchini and onion in margarine until tender (about 10 minutes). Stir in seasonings. In large bowl, blend eggs and cheese. Stir in vegetable mixture. Pour mixture evenly into crust. Bake at 375 for 30 minutes, or till knife inserted in center comes out clean. Let stand 20 minutes before serving. Serves 6.
