Banana Muffins

1/2 C butter
1/2 C sugar
1 egg
1 cup mashed bananas (about 2)
1 tsp. baking soda dissolved in 1 T hot water
1-1/2 C flour
1/4 tsp. salt (optional)

Grease 12 muffin cups. In a large bowl, cream together the butter and sugar. Add the egg, bananas, and dissolved baking soda, mixing well. Stir in flour and salt, blending well. Pour batter into muffin cups and bake in a 375 oven for 20 minutes.

Note: You may add 1 tsp. nutmeg or cinnamon to the batter if you like, and you may add blueberries or chocolate chips if you like.
