Cheesecake

Crust
1-1/2 cups graham cracker crumbs (1 wax paper bag)
1 stick melted butter, unsalted
3 T sugar

Filling
3 8 oz. pkg cream cheese (at room temperature)
1 cup sugar
3 eggs
1 stick melted butter
1 tsp. vanilla

Preheat oven to 450.

Combine crust ingredients and press into bottom and sides of 9" springform pan.

Beat cheese and sugar until fluffy. Add eggs one at a time, beating after each. Blend in the butter and vanilla. Pour into crust. Bake about 15 minutes at 450. Cool and refrigerate. Top with fresh or canned fruit, if desired.

Note: You can tell if it is done by jiggling the pan a little. If it seems really soupy, bake it a little longer. It does thicken as it cools, so it doesn't come out of the oven completely jelled.
