Mu-Shu Vegetables

3 Chinese mushrooms, soaked and chopped
2 cloves garlic, minced and 2-3 tsp. minced ginger
1 large onion, sliced very thin
1/2 cabbage, finely shredded
1 small carrot, shredded
3-4 scallions cut in 2" pieces
2 T soy sauce
1 T hoisin sauce (or more to taste)

Saute onion and garlic, add other veggies. Stir fry till cabbage wilts. Add scallion, soy sauce, hoisin sauce.
