Debbie's Chinese Noodles

1 lb. thin spaghetti or linguini (cooked al dente) drained, rinsed in cold water to cool

6 T red wine vinegar
4 T light soy sauce
4 tsp sugar
4 tsp sesame oil

peeled and seeded cucumber, sliced into thin strips
sprinkling of scallion
optional: broccoli, sprouts, bean curd, etc.

Mix sauce - pour over pasta and veggies. Refrigerate.
