Barbara's Vegetable Soup

INGREDIENTS:
2 cups onion, chopped
3 large garlic cloves, minced
1 cup carrots, chopped
1 cup celery,chopped
1 cup parsnip, chopped
1 cup string beans, cut in 1-inch pieces
1/2 cup green pepper, chopped
1-1/2 cup zucchini, chopped
10 oz. spinach, washed and drained
1/4 cup tomato sauce
2 cups potatoes, peeled and chopped
7 cups chicken, beef or vegetable broth (may be made with bouillon cubes)
salt and pepper

DIRECTIONS:
Saute onions and garlic in small amount of olive oil. Add carrots, celery, parsnip, and string beans, broth and tomato sauce, salt and pepper. Bring to a boil, lower heat, and simmer about 15 minutes. Add green pepper, zucchini, potatoes and spinach. Bring back to a boil and simmer another 15-20 minutes until all vegetables are tender.

NOTE: You may increase, decrease or substitute vegetables of your choice in this recipe.
